Apple and Almond Butter Fudge

Often one is in need for a tasty dessert or snack but is limited in choices. This recipe was created to fill the need for a sweet gluten-free treat that still resembled our original cooked fudge. And it happens to be wonderful.


½ cup unsweetened applesauce

½ cup almond butter

½ cup coconut oil, melted

2 tbsps pure maple syrup

? cup chopped pecans


Line a loaf pan with parchment paper, ensuring that all sides are lined. In a food processor, combine applesauce, almond butter, melted coconut oil and maple syrup and process until smooth. Add pecans and process until pecans transform into small chunks. Adjust sweetness with additional maple syrup if desired. Pour mixture into prepared loaf pan. Place in freezer 30−45 minutes or until fudge has solidified without over-hardening (you should be able to run a knife through it easily). Remove fudge from pan by pulling up the paper then gently peel back the paper before slicing. Slice the slab vertically into 8 bars then slice each bar into 3 sections. Store in freezer and allow to thaw 5−8 minutes at room temperature before serving.
