Hard boiled eggs can be tricky. Here is the secret you need for perfection.
Perfectly cooked hard boiled eggs are less than 15 minutes away!
Start with a dozen eggs in a pan. Fill the pan with water until the eggs are completely covered. Add a pinch of salt. Then bring the water up to a boil. Once the water reaches a boil, let them boil for two minutes. Then, cover the pan and turn off the heat, letting the eggs sit for 11 minutes.
To check the timing of an egg (at about eight minutes), take one out of the pan and put it in an ice bath. That stops the cooking process and cool the egg completely. Then you peel the egg. (Note: If it’s still a little warm, put it back in the ice bath for a little bit.) Cut the egg in half to check how done the yolk is and decide if you need to leave the eggs in for longer than 11 minutes.
Once the time is up, take all of the eggs out of the water and put them in the ice bath. Let them sit for about one minute. Then they’re ready to peel. Crack the shell on a counter or your cutting board and roll it forward while pressing down just a little to crack the shell.
